Student commentary from Eureka County’s seventh and eighth grade students.
Have you ever wanted something a certain way at a restaurant? You order your food, but it comes out and it is nothing like what you had in your head. Well, I’m sick of it. All I want is a steak taco with sour cream, steak, and a flour tortilla. That’s it! It's not that hard.
Instead, I usually end up staring down a plate covered in onions, tomatoes, and parsley—everything I didn't want, and exactly what ruins a good meal. For some reason, restaurants can never get the simple things right.
Right now, our local dining options are pretty limited. Don't get me wrong, we love what we have. We can head over to The Depot, but they mainly cover the breakfast and lunch rush. If you're looking for dinner, we have the Urban Cowboy, but you're out of luck if you're craving Mexican food. If you want a simple, perfect steak taco in the evening, Eureka leaves you completely empty-handed.
As you can see, restaurants are highly needed in Eureka, so what better time to start! Support Eureka by opening a restaurant and it is guaranteed I will be a regular (if you make my tacos right).
